French toast, or "Le pain perdu" (old bread) is such a classic breakfast dish. Your first bite will transform your balcony third world view overlooking brutalism's finest arhitecture into a serene French provence little old house. Smelling the fresh air, overlooking the lavender fields, watching the sun rise in your wooden rocking chair while the butter melts over the crispy seared surface of the bread emulsifying with the sweet honey drizzle. Sipping home made herbal tea and just enjoying the carefree start of your day not being occupied by whats to come returning into reality.
Ingredients
- 8 slices stale bread, (2-4 days old)
- 2 eggs
- 150 ml milk, you can use dairy free
- 3 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
- 1 pinch salt
- 1/6 teaspoon nutmeg
- 1/8 teaspoon star anise
- 1/2 teaspoon vanilla extract
- butter for frying
- vegetable oil for frying
- honey
- berry fruit
Method

Cut your stale bread into 1.5-2 cm slices. It is crucial to use old bread because fresh bread will soak up too much liquid and your toast will be too soggy.

In a bowl, whisk together eggs, milk, sugar, vanilla and all the spices.
- 3)
Whisk until all the ingredients have combined and there’s no eggs hanging loose from the whisk.

Now take your non stick pan on medium-high heat and add few drops of vegetable oil along with butter. (The oil rises the burning point of the butter preventing it from burning off and making your bread crust, well burnt)

Now dip your bread into the batter, coating on both sides (Don’t let it sit in the batter and soak, it will penetrate too deep into the slice making the whole toast soggy).

And transfer onto the pan once the milk solids in the butter start to slightly brown.

Feel free to move the slice around the pan making it apsorb all the excess butter that would otherwise burn off due to high heat.

Fry approximately 90 seconds per side or until the bubbles foaming up on the bottom start shrinking down.
- 9)
Once turned, you should have a beautiful golden brown crispy surface.

Once done, transfer to a paper towel to soak up any potential excess grease and serve with a drizzle of honey and butter along with some fresh berries.
