Cookies? You'll never be too old to enjoy coming home to open a jar of fresh baked chocolate chip cookies just like from the 90's cartoons where they would usually be given to kids as a reward for being well disciplined everyday. I may not have gotten the cookie for being good, but I was given this beautiful recipe which is even better. They're so rich in flavour, just enough sweet, crispy on the outside and delightfully chewy and soft on the inside. When you open the oven and that buttery-cinnamon smell fills your whole house you'll never need a new cookie recipe again.
Ingredients
- 140 gr brown sugar
- 2 eggs, room temp
- 230 gr butter, room temp
- 150 gr dark chocolate, (bits or chopped)
- 100 gr hazelnuts, toasted
- 170 gr flour, (I used spelt)
- 170 gr oat flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/3 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Method
- 1)
Sift the flour in a bowl, add salt, cinnamon, nutmeg, baking powder and soda and mix together.

In a different bowl, cream together butter and sugar with a hand mixer until the sugar melts and the mixture has lighten in color.

add your eggs one at a time mixing on low speed.

Once the eggs have combined well, with a dough hook attached, start adding the dry ingredients and mix on low speed until resembling a dough.

Add your chocolate bits and crushed hazelnuts.

Now kneed just shortly by hand as you don’t really want gluten developing and shape into a disk, cover with plastic foil and rest in the fridge for about half an hour.

Take out of the fridge and divide the dough to approx. 30-35 pieces. Roll them by hand into little balls and flatten into discs.

Place them onto your baking tray aligned with parchment paper.

Bake on 170*C for 10-15 minutes
