Quick and simple recipe I came up with while craving for that sweet apple pie with a big scoop of vanilla ice cream while on a diet. So I tried to come up with a way to combine all the flavours from the pie but of course leaving out the butter, sugar, yolks and all that other fatty goodness. Since being a huge breakfast person I tried to replicate it in a smoothie bowl and came up with fantastic results. It's got a rich apple cinnamon puree that tastes just like the pie filling, oat milk, vanilla and walnuts replicate the crust filling beautifully and the frozen banana just gives it that amazing creamy thickness. If you love apple pie, you have to give this healthy breakfast version a try, you'll love it.
Ingredients
- 1 apple, (Just not a sort with high acidity like granny smith)
- 1 banana, frozen
- 2 dcl oat milk
- 1/2 teaspoon cinnamon
- 2 tablespoons oats
- 2-3 drops vanilla extract
- 1 small handful walnuts
- fruit to garnish by wish

Begin by preparing your apple puree (you can use store bought apple puree but i much prefer the home cooked version as it’s super easy to make, takes very little time and tastes so much better plus has no additives.).

Peel your apple, cut into small chunks and saute in a small pot over medium high heat.

Add your cinnamon, and once the apple starts caramelizing on the surface pour just a bit water, like 3-5 tablespoons, cover with a lid and let cook for 5-10 minutes, gradually adding a bit more water if needed.
(I like cooking it this way instead of just boiling in water as you get a far more concentrated flavour with the maillard reaction.)
As you can see in the given photo, the more sugar your apple has, less water you will need for it to break apart. This is without adding any water at all.

Once your apples are juicy and tender, mash them up a little bit and they’re ready to use. (I like to make a larger batch and vacuum up smoothie sized portion and store them in the fridge)

Now transfer your puree into a blender, add chopped frozen banana, oat milk (you can use any but the sweetness from the oats is what replicates the taste of the pie crust most evenly), vanilla, oats, walnuts and blend on high speed until creamy per desire.

Pour your mixture into a bowl and garnish with topping as pleased.
Notes
Thinly sliced apples and slightly toasted walnuts to garnish would work the best probably in the way of replicating the pie itself although I enjoy my combination of fresh berries and coconut chips the most.
